COOKING PROGRAMS

Sapiens automated programs are easy to manage and provide quality results. Through this programming the combi oven itself controls the different phases of cooking and changes the parameters:

  • chooses cooking method (convection, steam or combined)
  • controls the temperature continuously
  • monitors the humidity in the cooking chamber
  • regulates the fan speed

The automatic control always ensures perfectly prepared dishes - juicy meat, excellent tan, fragrant bread and desserts, crispy fried dishes.

In addition, LAINOX focuses on economy and lower energy consumption.

 

ECOSPEED DYNAMIC

 

With this function, your combi oven by recognizing the quantity and type of product optimizes and controls the energy consumed, maintains the correct cooking temperature in the chamber, preventing any fluctuations.

 

 

 

STEAM COOKING

Steam cooking fully preserves the nutritional properties of the products. The colors remain bright and the need for spices, water and salt is less. Sapiens allows steam cooking at low temperatures - from 50 ° C to 85 ° C, with absolute precision, minimal amount of water and energy consumption.

Cooking with 100 ° C steam allows you to replace cooking in the preparation of any type of food. This saves a lot: no extra dishes are used, space is saved, no water is expected to boil, lower energy consumption and shorter cooking time.

Fast / forced steaming (up to 130 ° C) is ideal for frozen products (frozen vegetables), especially in large quantities.

Vacuum cooking

This cooking technique requires precision of the chamber temperature and the core of the product. This can be ensured with a very thin 1mm probe (specific for vacuum cooking). This method of cooking preserves the maximum nutritional qualities of the products with the least possible weight loss.

 

ECO COUPLE

Sapiens recognizes the type and amount of food loaded and produces the exact amount of steam needed to prepare it. The Ecovapor system significantly reduces water and energy consumption, thanks to the automatic control of the steam that is injected into the chamber.

 

CONVECTION COOKING

A distinctive feature of convection cooking is that it always gives an excellent result regardless of the type of food. Crispy or soft and juicy, LAINOX always offers the perfect dish.

Fan speed control saves energy and ensures even cooking by distributing heat in the cooking chamber with two-way ventilation.

 

COMBINED COOKING

Combined cooking allows excellent results in cooking meat and fish without the need for continuous pouring. The dish is protected from drying out thanks to the Autoclima humidity control system.

The perfectly cooked core of the product is provided by the multipoint temperature sample.

 

CLEANING - FLAWLESS AND EASY

LAINOX offers the new LCS automatic cleaning system with liquid detergent in a 100% recyclable cartridge, placed in a special compartment under the cooking chamber.

The detergent is injected into the chamber automatically. The two-step action of the product, first with steam and then under running water, is the most effective way to remove fat and cooking deposits.
